Cheesy Sweet Pepper Burgers

What You Need:

1 tsp olive oil
1 green bell pepper, sliced thin
1 sweet red bell pepper, sliced thin
1 sweet yellow bell pepper, sliced thin
1 onion, sliced thin
1 garlic clove, minced
1 tbsp balsamic vinegar
4 slices of mozzarella cheese
1/4 C of mustard
4 hard rolls, split and toasted
8 lettuce leaves
1 tomato, sliced thin

How to Make It:

Preheat the broiler.
Pour the oil into a skillet and place the skillet over medium heat.
Add all the peppers, onions and the garlic and sauté 5 minutes or until crisp tender.
Drizzle the vinegar over the vegetables and toss to coat.
Spread the mustard over the top of roll.
Spoon the vegetables over the bottom of each roll.
Place a slice of cheese over the vegetables.
Place the bottom of the rolls on a broiler pan.
Place the pan in the broiler and broil 4 inches from the heat for 2 minutes or until the cheese melts.
Top each sandwich with a couple slices of tomato and a lettuce leaf and cover with the top of the bun.

Makes 4 sandwiches

This tasty burger is great for those who are trying to cut back on their meat intake. The sautéed vegetables give it a low fat twist. For something a little different try a couple of fresh basil leaves on each sandwich instead of the lettuce leaves. You can also make a great sauce by mixing together 1/4 C of mayonnaise and 1/2 tsp of horseradish together and spreading it on the buns instead of the mustard.

A steak without sautéed onions just isn’t the same. The flavor enhances the taste of the steak and adds a great taste treat to a meal. While grilling your steak, pull out your favorite skillet, add a little butter and your onions and cook just long enough to make the onion transparent. Add to the top of your steak and the flavor just bursts in your mouth!

Vidalia onions are wonderful cooked. These onions are usually used for onion rings or baked with butter, bouillon and cheese in the oven because they are sweeter onions than most. These are also used in a lot of restaurants for blooming onions.

Cool Foods at the Beach

Spending the day entails packing enough good healthy, easily to tote foods, that will keep your family satisfied all day long.

Try to take wholesome foods that don’t have a lot of packaging to keep down on the garbage waste. Take foods that aren’t in big bags so those sandy hands won’t be reaching into them and ruin the food. There’s nothing worse than biting down on a grain or two of sand. Here are some ideas for cool foods at the beach that are easy, healthy, satisfying and cooler friendly.

Oranges are easy to peel and you can throw the peel in the grass for the deer or other animals to eat! Apples make a great choice for the beach. Just throw the core on the ground for the animals, but make sure you throw it out of people’s walk area.

Pickles and cheese make a great beach snack. Put a few pickles in a sandwich bag and some slices of cheese in a separate baggie. Just be sure those little hands are clean before they reach in and grab. Prepared sandwiches are easier to take when made at home. Pack them in a zippered baggie and tote them in the cooler. You will want to place them on top of the ice to ensure the bread doesn’t become too soggy.

Individually wrapped snack cakes or cookies are probably not on the top of the list as far as healthiness goes. Yet for some reason those little chocolate snack cakes taste so good at the beach. Take them out of the box before toting. If they are chocolate and will melt then place them in zippered baggies before placing in the cooler. The plastic that is already on them won’t prevent melted ice from seeping through.

If you’re taking chips, place them in individual baggies or containers. Not only does this ensure everyone has their favorite but it will keep the sandy hands from ruining the whole bag. Individual bags are much easier to pack also.

Watermelon slices are cool, refreshing and delicious. How can you make them cooler ready for the beach? Cut each slice into 1/2 inch squares and place them in individual baggies. Cut them into triangles and place one slice in each baggie.

Want to grill out on the beach? Prepare hamburger patties ahead of time and place them in baggies in the cooler. Accompaniments such as tomato or onion slices and pieces of cheese can also be cut ahead of time and place in water proof containers or baggies in the cooler. As for the condiments place them in small squeeze bottles that fit nicely into the cooler.

Spending the day at the beach can be fun, relaxing and can take the edge off of the heat. With a little advance planning taking that cool beach food can be a simple venture. Go enjoy your day in the sun and don’t forget the ice.

Love You Lunchtime Sandwiches

What You Need:

12 slices of white bread
12 slices American cheese
4 T butter, room temperature

How to Make It:

Spread each of the slices of bread on one side with the butter.
Place a skillet or griddle over medium heat on the stove.
Lay 6 slices of bread in the skillet butter side down.
Lay 2 slices of cheese on each piece of bread in the skillet.
Top each sandwich with the remaining bread slices buttered side facing up.
Brown for 3 minutes then flip the sandwiches.
Continue to brown an additional 3 minutes or until the sandwich is a golden brown on both sides and the cheese has melted.

Serving Size: 6 sandwiches

These good ole American grilled cheese sandwiches will show your children just how loved they are. Use heart shaped cookie cutters to cut each sandwich into different size edible hearts for the kids to enjoy.

Strawberry Sweetheart Bites

What You Need:

4 (6 in) soft tortilla shells
1/4 (8 oz) container strawberry cream cheese
4 T strawberry jam

How to Cook It:

Spread each of the 4 tortillas with the strawberry cream cheese to the edges of the tortilla.
Spread 1 T of strawberry jam down the middle of each of the tortillas.
Fold the end of the tortilla in about 2 in.
Grab the front edge of the tortilla and roll until completely closed.
Cut into 2 inch bites.

Serving Size: 24

These little treats can be wrapped and placed in an Easter Basket, put into lunchboxes or used as appetizers for a child’s Valentine’s Day party.
