Fresh Mint Melon Dish

What You Need:

1 C of water
3/4 C of sugar
3 tbsp lime juice
1 1/2 tsp fresh mint chopped
1/8 tsp salt
1/2 small watermelon, cubed
1 small cantaloupe, cubed
1 small honeydew melon, cubed
1 large peach, sliced
1 C of fresh blueberries

How to Make It:

Place the water into a saucepan and place the pan over medium high heat.
Add the sugar, lime juice, mint and salt and stir to blend in.
Bring the mixture to a boil and boil for 2 minutes.
Remove the pan from the heat, cover and let stand until completely cooled.
Mix the melon cubes together in a large non metal bowl.
Gently fold in the peaches and blueberries.
Add the cooled syrup and gently stir until the fruit is well coated.
Cover the fruit and refrigerate for 2 hours, stirring occasionally.
Drain well before serving.

Makes 6 servings

Fresh melon is a great way to cool off on a hot summer day. Add grapes, strawberries or any of your favorite fruits to this dish. Better yet make it into a delicious dessert by adding a little whipped topping to each serving.

Hot and Spicy Lemon Shrimp

1 lb. butter
3 lemons, sliced
3 T of pepper
1/2 t of salt
2 cloves of garlic, minced
2 T of Worcestershire sauce
1/2 t of hot pepper sauce
2 1/2 lbs. shrimp, uncooked in shells

How to Make It:

The oven is set to preheat to 375 degrees.
Over medium heat in a large saucepan melt the butter.
To the melted butter add the lemon slices.
Gently stir in the pepper, salt and garlic.
Blend in the Worcestershire sauce and hot pepper sauce.
Bring the mixture to a moderate boil.
Turn the heat to low, cover and simmered for 30 minutes, stirring often.
Place the shrimp in a single layer into the bottom of a roasting pan.
Pour the simmered sauce over the shrimp.
Place the roasting pan in the oven and bake 20 minutes or until the shrimp are cooked through and pink.

Makes 12 servings

Preparation Time: approximately 15 minutes
Cooking Time: approximately 50 minutes
Total Time: approximately 1 hour 05 minutes

Your buffet will be complete with these shrimp as the opening to your Christmas dinner. Serve warm, covered in sauce and add lemon slices on the side.

Barbecued Hot Potatoes

2 lbs. russet potatoes, peeled and cut into large chunks
1 yellow onion, peeled and cut into chunks
1 tbsp bacon drippings
1/2 C of ketchup
1 tbsp red pepper sauce
1 tbsp sugar
1 tsp of salt
1/2 tsp pepper

How to Make It:

Cover the potatoes and onion chunks with water in a large pot.
Place the bacon drippings, ketchup and red pepper sauce into the pot and stir until well blended.
Add the sugar, salt and pepper and blend all the ingredients together well.
Position the pan over high heat and allow the water to come to a brisk boil.
Turn the heat to medium low and cook the potatoes in the sauce for 25 minutes.
Turn off the heat under the pan and allow the potatoes to rest in the sauce for 30 minutes.
Most of the liquid should be absorbed into the potatoes.
Turn the heat to low under the pan and cook for 10 minutes, stirring occasionally or until the mixture bubbles.

Makes 8 servings

The red pepper sauce can be adjusted to suit your taste or can be left out completely if you prefer. Be sure to let the potatoes stand in the sauce to give them flavor and their red tint.

Love You Lunchtime Sandwiches

What You Need:

12 slices of white bread
12 slices American cheese
4 T butter, room temperature

How to Make It:

Spread each of the slices of bread on one side with the butter.
Place a skillet or griddle over medium heat on the stove.
Lay 6 slices of bread in the skillet butter side down.
Lay 2 slices of cheese on each piece of bread in the skillet.
Top each sandwich with the remaining bread slices buttered side facing up.
Brown for 3 minutes then flip the sandwiches.
Continue to brown an additional 3 minutes or until the sandwich is a golden brown on both sides and the cheese has melted.

Serving Size: 6 sandwiches

These good ole American grilled cheese sandwiches will show your children just how loved they are. Use heart shaped cookie cutters to cut each sandwich into different size edible hearts for the kids to enjoy.
