Roasty Toasty Pumpkin Seeds

What You Need:
1 qt. water
2 TBSP salt
2 C pumpkin seeds
1 TBSP unsalted butter, melted
How to Make It:
Preheat oven to 250 degrees
In a large sauce pan heat the water on high. Add the salt and bring the water to a rolling boil.
Add your seeds and boil for 12 minutes. Drain the seeds well using a strainer or colander.
Once you have drained your seeds, empty them on to paper towel in a single layer and pat them dry.
Take your melted butter and your seeds and add them together in a large mixing bowl. Toss the seeds to evenly coat them in butter.
On a large cookie sheet, spread your seeds out in a single layer and bake for 35 minutes or until light golden brown.
Note: Flip or stir your seeds approximately every 10 minutes to insure that they do not burn.
Allow the seeds to cool before shelling and eating.
Makes 2 cups of toasted seeds
Eat them as is, or add them to a homemade snack mix for a healthy snack.
